Sushi Fukurou: Chef Transition and Introduces New Head Chef

Sushi Fukurou announces a chef transition effective April 28, marking a new chapter for the restaurant.

Chef Miki will be departing Sushi Fukurou on April 28. The restaurant expresses its sincere gratitude for her dedication, craftsmanship, and the experiences she has created for guests throughout her tenure. Her contribution has been an integral part of shaping Sushi Fukurou’s identity.

At the same time, Sushi Fukurou is honored to introduce its new Head Chef, Young.

Born in South Korea and raised in Guam, the new Head Chef began his culinary journey in Hawai‘i after moving to O‘ahu six years ago. Throughout his career, he has navigated the challenges of the industry with persistence and commitment, guided by a consistent purpose: to create food that brings joy to guests.

During his time at Sushi Fukurou under Chef Miki’s leadership, he refined his craft and developed the foundation for his culinary vision. His approach is grounded in restraint and clarity, focusing on refined simplicity rather than excess. While honoring Japanese culinary tradition, he also incorporates local Hawaiian ingredients and subtle influences from his Korean heritage.

As Head Chef, he aims to further elevate the Sushi Fukurou dining experience through precise technique, thoughtful progression, and a continued commitment to quality. For him, omakase represents a standard of excellence to be upheld in every course.
